Sweet Potato Breakfast Smoothie (Vegan)

The other morning, I had the opportunity to talk and cook with some middle school students as part of their monthly cooking club. It was so much fun! They asked me to talk about local food and what I do in my job to support local agriculture. These kids were awesome! Since we were meeting at 8 in the morning, I decided that sliced apples with cinnamon and a sweet potato breakfast smoothie would be a perfect way to showcase two of North Carolina’s primary veggies – apples and sweet potatoes.

Most people, when you ask if they’ve ever had a sweet potato smoothie, look at you like you’re a little nuts. Sweet potatoes? In a smoothie? But, as soon as they try it, they’re hooked.

Just five ingredients!

Sweet potatoes are a power house veggie and they’ve got so much natural sweetness they are a great addition to a smoothie. To make our breakfast smoothie, we added orange juice, bananas, and medjool dates. SO good! For the liquid, we went with coconut milk but you could use almond milk or any other milk you’ve got on hand. To add a little extra sweetness, we used dates, but you could also use honey. To make it a little bit slushier, we added ice cubes. This recipe couldn’t get any easier!

Ingredients

  • 1 c cooked sweet potato (about 1 to 2 sweet potatoes)
  • 1 c coconut or almond milk
  • 1 c orange juice
  • 1 banana
  • 1 medjool date (or 1 T honey)
  • Dash of cinnamon
  • Handful ice cubes

Instructions

  1. Combine all the ingredients in your blender.
  2. Blend until smooth. Add additional milk if it's too thick!
  3. Enjoy!
