Make mini cupcakes as directed on the box. Let cool.
Prepare buttercream frosting - whip the shortening and butter together. Add vanilla. Add powdered sugar. Add milk until it's the right consistency. You want MEDIUM consistency frosting so that your grass stands up when you pipe it.
Add Kelly Green colored food dye to 1/2 the batch of frosting until it is a bright, fun green.
Frost enough cupcakes (about 26) to line the edges of your field with white frosting and then dip in rainbow sprinkles.
Fill decorator bag 1/2 full with kelly green frosting. Add decorator tip 233. Frost each mini cupcake with grass! You will need about 28 mini cupcakes decorated green.
