Apple Banana Bread

This quick bread could not be simpler!

Ingredients

  • 1 cup sugar
  • 1 egg
  • 1/2 cup butter , softened
  • 3 to 4 very ripe bananas
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups gluten-free flour (I used Cup4Cup)
  • 2 to 3 apples , peeled and chopped
  • 1/2 cup walnuts , chopped (optional)

Instructions

  1. Cream sugar, egg, and butter in a stand mixer.
  2. Add ripe bananas and vanilla. Mix well.
  3. Add flour, baking soda, baking powder, and salt. Mix until combined.
  4. Gently fold in chopped apples.
  5. Pour into a greased bread load pan. Smooth the top with your spatula.
  6. Bake for an hour at 350 degrees. Test with a cake tester or a knife to make sure that the bread is cooked all the way through the middle.
