Ingredients for Cookies
1cupbutter, softened
3/4cupsugar
1egg
1teaspoonvanilla extract
2cupsflour(I used Cup4Cup gluten-free flour)
1/2teaspoonbaking soda
1/4teaspoonsalt
Ingredients for Icing
1cupconfectioner's sugar
2tablespoonswater
1tablespooncorn syrup
1teaspoonvanilla extract

In a stand mixer, cream together butter and sugar.
Add egg and vanilla.
Combine flour, baking soda, and salt. (Confession - I don't mix this in a separate bowl.)
Add flour to butter and sugar mixture. Mix well.
Divide dough in half. Set one half aside.
On a lightly floured surface, roll out half the dough.
Cut into shapes and place on a cookie sheet lined with parchment paper.
Cook at 350 degrees for 8 to 10 minutes.
Instructions for Icing
Combine confectioner's sugar, vanilla, corn syrup,and water. Stir together. If it's too thin, add more sugar. If it's too thick to spread, add more water.
