  • 1 1/2 c sugar
  • 1 c butter
  • 1 teaspoon vanilla
  • 3 eggs
  • 1 c flour (I used cup4cup gluten-free flour)
  • 1 c unsweetened cocoa powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 c mini chocolate chips or your favorite chocolate chunks

  1. Preheat the oven to 350 degrees and grease a 9x9 or 8x8 pan.
  2. In a medium sized saucepan, combine the sugar and the butter over medium to medium low heat. Stir with a wooden spoon or heat resistant spatula while the butter melts.
  3. Once the sugar and butter are combined, add the vanilla. Stir. Set aside to cool for a couple of minutes. (I usually preheat the oven and grease the 9x9 brownie pan at this point.)
  4. Add 3 eggs. Stir well to combine.
  5. Add 1 cup flour, 1 cup cocoa powder, salt, and baking powder. Stir well.
  6. Add the chocolate chips or chocolate chunks and spread in a greased 9x9 pan.
  7. Cook at 350 degrees for about 30 to 35 minutes.
