Ingredients

salmon
Salt and pepper
1/4
cup
mayonnaise

T
spicy yellow mustard
1/2
bunch scallions
, chopped
1
small handful cilantro
, no stems, chopped
1/4
c
gluten-free breadcrumbs

egg
Instructions
Salt and pepper the salmon. Bake at 350 degrees for about 15 minutes. Let it cool.
Flake cooked salmon into a large bowl.
Add mayonnaise, mustard, scallions, cilantro, breadcrumbs, and egg.
Combine with a large fork.
Using your hands, form into salmon cakes. Space out evenly on a foil lined cookie sheet.
Bake at 425 degrees for 10 to 15 minutes.
