Roasted Pepper and Tomato Soup

Ingredients

  • 2 T . olive oil
  • 5 tomatoes , quartered
  • 3 peppers , halved
  • 1/2 lb carrots , chopped
  • 3 small onion , chopped
  • 4 to 5 cloves garlic , chopped
  • 32 oz . vegetable broth

Instructions

  1. Drizzle olive oil over the peppers and tomatoes and roast for 30 to 40 minutes at 400 degrees.
  2. In a large soup pot, saute carrots, onions, and garlic until softened.
  3. Combine roasted peppers and tomatoes with sauteed veggies. Stir.
  4. Add vegetable broth. Simmer for 10 to 15 minutes.
  5. Use an immersion blender to smooth out the soup. Remove any large pieces.
  6. Enjoy!
