This recipe is super simple and was absolutely delicious. I made a small batch of stuffing in a large bowl, made little pockets in our pork chops, stuffed them til they were overflowing and popped them in the oven. Glutino makes an awesome gluten-free stuffing that I like to keep in the pantry as a quick side dish with a roasted chicken or to crumble into my meatloaf mix.
If you have glutino gfree stuffing, use it. If not, make about 1 1/2 cups of your favorite stuffing and add in about 4 ounces of shredded cheddar cheese and 1 egg. This recipe is hard to mess up!
We served our stuffed pork chops with pureed sweet potatoes and sauteed chard… Enjoy!
