Farmers Market Egg BLT Sandwich

Once in a while, the kids (and I!) decide that the time has come to have breakfast for dinner. I have to confess that I did not really discover this amazing, time-honored tradition until this past year or so. What a concept! Breakfast at dinner? Why not?

Summer vacation just begs for easy meals. Breakfast for dinner certainly fits the bill. But, truthfully, breakfast for dinner is delicious but it isn’t always easy. Don’t laugh. The other evening, after an intense Yatzhee battle, I was feeling way too lazy to even prepare breakfast for dinner. I asked for suggestions. The girls hollered, “Eggs!” and my older son chimed in with, “BLTs!” Hmmm… To make everyone happy, why not make Egg BLTs?

I am sure that I did not invent this sandwich, but I certainly have never seen it before and I cannot wait to make it again.

We called this our Farmers Market Egg BLT Sandwich because the kids and I picked up every. single. ingredient. from our farmers market that very afternoon.

Tomatoes!
